
Herbed Coconut Rice

- Stovetop Method
- Rinse the jasmine rice thoroughly under cool water until the water runs mostly clear. Drain well.
- In a medium saucepan, combine the rice, coconut milk, salt, and ½ cup water. Add additional water just until the liquid sits approximately ½ inch above the rice.
- Set the pan over medium heat and bring to a gentle boil. Once boiling, cover tightly with a fitted lid and reduce the heat to low. Allow the rice to simmer undisturbed for 15 minutes.
- Remove the pan from the heat, keeping the lid in place, and let the rice rest for 10 minutes.
- Uncover, fold in the fresh herbs, and fluff gently with a fork. Serve warm.
- Rice Cooker Method
- Combine the rice, coconut milk, salt, and water in the rice cooker, maintaining the same proportions and liquid level.
- Cook using the “quick rice” or standard white rice setting. Once the cycle is complete, allow the rice to rest, covered, for 10 minutes before opening.
- Add the fresh herbs and fluff lightly before serving.
