
Soft Flour Tortillas
Soft and tender flour tortillas with a delicate richness—an essential staple, easily prepared and endlessly versatile for everyday meals or more generous tables.

- In a medium bowl or food processor, combine the flour, salt, and baking powder.
- Add the butter or lard and cut in using a pastry blender, or pulse briefly if using a processor, until the mixture resembles coarse sand.
- Add ¾ cup of the hot water and mix until a dough begins to come together, adding the remaining water gradually as needed until a smooth, cohesive dough forms.
- Transfer to a lightly floured surface and knead briefly, about 1 minute, until smooth. Cover with a clean, damp towel and allow to rest for 3–4 minutes.
- Divide the dough into 12 equal portions and roll each into a ball. Cover again and let rest for at least 5 minutes.
- Heat a large heavy pan or cast iron skillet over medium heat.
- Working one at a time, roll each portion into a rough circle, approximately 6–7 inches in diameter. Alternatively, press between sheets of parchment using a tortilla press.
- Cook each tortilla for 30–45 seconds, until light golden spots form, then turn and cook the second side. Adjust the heat as needed to ensure gentle browning without overcooking.
- The finished tortillas should remain soft with light, golden markings. Avoid overcooking, as this will cause them to dry and crack.
- To Keep Warm & Serve
- Transfer cooked tortillas to a covered container or wrap in a clean towel or foil to keep warm and tender until ready to serve.

To rewarm, place a slightly damp paper towel in the bottom of a microwave-safe container. Add the tortillas, cover loosely, and heat for 15–30 seconds, then keep covered to retain warmth. Storage:
Store at room temperature in an airtight container for up to 24 hours or refrigerate for up to 1 week.
To freeze, separate tortillas with parchment paper, wrap well, and store in a freezer-safe container or bag.
